Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9×5 inch loaf pans.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, combine oil, sugar, eggs, and vanilla extract. Beat until well blended.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the diced apples and nuts (if using).
  6. Pour batter evenly into the prepared loaf pans.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in pans for 10 minutes before transferring to a wire rack to cool completely.
