Description

Delicious apple cinnamon muffins topped with a sweet crumb topping.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 2 cups peeled and diced apples
  • For the crumb topping: 1/2 cup all-purpose flour, 1/4 cup packed brown sugar, 1/4 cup cold unsalted butter, cubed, 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined.
  5. Fold in diced apples.
  6. Prepare crumb topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
  7. Fill muffin liners about 2/3 full. Sprinkle crumb topping over each muffin.
  8. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

  • Use your favorite type of apple for these muffins.
  • Store muffins in an airtight container at room temperature.
