Description
Delicious apple cinnamon muffins topped with a sweet crumb topping.
Ingredients

- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 2 cups peeled and diced apples
- For the crumb topping: 1/2 cup all-purpose flour, 1/4 cup packed brown sugar, 1/4 cup cold unsalted butter, cubed, 1/2 tsp ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined.
- Fold in diced apples.
- Prepare crumb topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
- Fill muffin liners about 2/3 full. Sprinkle crumb topping over each muffin.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

- Use your favorite type of apple for these muffins.
- Store muffins in an airtight container at room temperature.
