Description

Enjoy these delicious and healthy apple oatmeal muffins. They are perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 1 egg
  • 1 cup chopped apple

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  3. In a separate bowl, combine applesauce, milk, oil, brown sugar, and egg.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the chopped apple.
  6. Fill muffin cups 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute whole wheat flour for all-purpose flour.
  • Add nuts or raisins for extra flavor and texture.
  • Store in an airtight container at room temperature for up to 3 days.
