- 1 medium zucchini, grated
- 1 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon fresh herbs, chopped (such as rosemary, thyme, or oregano)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Grate zucchini and squeeze out excess moisture.
- In a bowl, combine zucchini, flour, Parmesan cheese, olive oil, herbs, garlic powder, salt, and pepper.
- Mix until a dough forms.
- Place dough between two sheets of parchment paper and roll out thinly.
- Remove top sheet of parchment paper and cut into desired cracker shapes.
- Transfer parchment paper with crackers to a baking sheet.
- Bake for 15-20 minutes, or until golden brown and crispy.
- Let cool on baking sheet before serving.
Notes
- Squeeze as much moisture as possible from the zucchini for crispy crackers.
- You can use different herbs based on your preference.
- Store in an airtight container for up to 3 days.
