Instructions
- Preheat oven to 350°F (175°C).
- Mix oat flour, baking soda, pumpkin pie spice, and salt.
- Whisk pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
- Combine wet and dry ingredients.
- Fold in chocolate chips, if using.
- Pour into a greased loaf pan.
- Bake for 50-60 minutes.
