Description

Make easy and healthy Blueberry Oat Greek Yogurt Muffins.


Ingredients

  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 1 cup fresh blueberries
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, Greek yogurt, honey or maple syrup, eggs, and vanilla extract. Whisk until well combined.
  3. In another bowl, mix baking powder, baking soda, and salt. Stir until evenly distributed.
  4. Add the dry ingredients to the wet mixture. Stir until just combined; be careful not to overmix.
  5. Gently fold in fresh blueberries. Make sure they’re evenly distributed throughout the batter without breaking them apart.
  6. Pour the batter into a muffin tin lined with liners. Fill each liner about 3/4 full.
  7. Bake in preheated oven for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack. Enjoy warm or store them for later!

Notes

  • Use fresh or frozen blueberries.
  • Store muffins in an airtight container.
