Description

Easy blueberry oatmeal bars perfect for meal prepping breakfast or snacks.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
  3. Stir in melted butter and vanilla extract until well combined.
  4. Press half of the mixture into the prepared baking pan.
  5. Sprinkle blueberries evenly over the base.
  6. Crumble the remaining oat mixture over the blueberries.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.

Notes

  • Use frozen blueberries if fresh are not available.
  • Store bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
