Description
Broccoli Cheddar Lasagna Soup combines the comforting flavors of broccoli cheddar soup with the heartiness of lasagna.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 1 cup water
- 3 cups broccoli florets
- 1 cup shredded carrots
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup lasagna noodles, broken into small pieces
- 2 cups shredded cheddar cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in vegetable broth, milk, and water. Bring to a simmer.
- Add broccoli, carrots, salt, and pepper. Cook until broccoli is tender, about 10 minutes.
- Stir in lasagna noodles and cook until noodles are tender, about 15 minutes.
- Remove from heat and stir in cheddar cheese until melted.
- Serve hot.
Notes
- For a creamier soup, use half-and-half instead of milk.
- Add cooked chicken or sausage for extra protein.
- Top with croutons or a dollop of sour cream.
