Description

Broccoli Cheddar Lasagna Soup combines the comforting flavors of broccoli cheddar soup with the heartiness of lasagna.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 cup water
  • 3 cups broccoli florets
  • 1 cup shredded carrots
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup lasagna noodles, broken into small pieces
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in vegetable broth, milk, and water. Bring to a simmer.
  3. Add broccoli, carrots, salt, and pepper. Cook until broccoli is tender, about 10 minutes.
  4. Stir in lasagna noodles and cook until noodles are tender, about 15 minutes.
  5. Remove from heat and stir in cheddar cheese until melted.
  6. Serve hot.

Notes

  • For a creamier soup, use half-and-half instead of milk.
  • Add cooked chicken or sausage for extra protein.
  • Top with croutons or a dollop of sour cream.
