Ingredients

- 1 butternut squash, peeled, seeded, and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter, melted
- 1/2 cup bread crumbs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil butternut squash until tender.
- Sauté onion and garlic in a pan until softened.
- Mash butternut squash and combine with sautéed onion and garlic.
- Stir in vegetable broth, heavy cream, Parmesan cheese, salt, and pepper.
- Pour mixture into a greased baking dish.
- Combine melted butter and bread crumbs, sprinkle over casserole.
- Bake for 20-25 minutes, or until golden brown.
