Description

A warm and comforting Butternut Squash Casserole, perfect for fall gatherings.


Ingredients

  • 1 butternut squash, peeled, seeded, and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil butternut squash until tender.
  3. Sauté onion and garlic in a pan until softened.
  4. Mash butternut squash and combine with sautéed onion and garlic.
  5. Stir in vegetable broth, heavy cream, Parmesan cheese, salt, and pepper.
  6. Pour mixture into a greased baking dish.
  7. Combine melted butter and bread crumbs, sprinkle over casserole.
  8. Bake for 20-25 minutes, or until golden brown.
