Description

Ingredients

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup butterscotch chips
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups shredded zucchini, excess moisture squeezed out

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Stir in butterscotch chips.
  3. In a separate bowl, mix sugar and vegetable oil. Add eggs and vanilla; beat well.
  4. Add dry ingredients to wet ingredients, mixing until just combined.
  5. Stir in shredded zucchini.
  6. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool before serving.
