Ingredients

- 2 lbs potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp fresh herbs (chives, parsley, thyme), chopped
- Salt and pepper to taste
Instructions
- Melt butter in a large pot. Add garlic and cook until fragrant.
- Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to partially blend the soup until smooth.
- Stir in heavy cream and cheddar cheese until cheese is melted.
- Season with salt and pepper.
- Stir in fresh herbs before serving.
Notes
- For a thicker soup, blend more of the potatoes.
- You can substitute vegetable broth for chicken broth.
- Add bacon bits for extra flavor.
