- 2 medium summer squash, sliced
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix together summer squash, Parmesan cheese, breadcrumbs, olive oil, minced garlic, salt, and pepper.
- Transfer mixture to a baking dish.
- Bake for 20-25 minutes, or until golden brown and squash is tender.
- Let cool slightly before serving.

- Add other vegetables, such as zucchini or tomatoes.
- Use different types of cheese, such as cheddar or mozzarella.
- Top with fresh herbs, such as parsley or thyme.
