- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber, squeezed to remove excess moisture
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
- Cooked rice or quinoa, for serving
- Optional toppings: sliced tomatoes, red onion, Kalamata olives, feta cheese
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Preheat grill or skillet to medium-high heat.
- Cook chicken for 5-7 minutes per side, or until cooked through.
- While chicken cooks, prepare tzatziki sauce. In a bowl, combine Greek yogurt, cucumber, dill, lemon juice, garlic, salt, and pepper.
- Serve chicken over rice or quinoa, topped with tzatziki sauce and your favorite toppings.
