Description

Enjoy flavorful Chicken Tzatziki Bowls. This recipe combines marinated chicken with a refreshing tzatziki sauce, served over a bed of your favorite grain.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed to remove excess moisture
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Cooked rice or quinoa, for serving
  • Optional toppings: sliced tomatoes, red onion, Kalamata olives, feta cheese

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Preheat grill or skillet to medium-high heat.
  4. Cook chicken for 5-7 minutes per side, or until cooked through.
  5. While chicken cooks, prepare tzatziki sauce. In a bowl, combine Greek yogurt, cucumber, dill, lemon juice, garlic, salt, and pepper.
  6. Serve chicken over rice or quinoa, topped with tzatziki sauce and your favorite toppings.

Notes

  • Marinate the chicken for a longer period to enhance flavor.
  • Adjust the amount of garlic and lemon juice in the tzatziki sauce to your preference.
  • For a low-carb option, serve over cauliflower rice.
