Description

Chipotle Agrodolce Tofu Skewers paired with a refreshing Avocado Mango Salsa.


Ingredients

  • 1 block extra-firm tofu, pressed
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon chipotle powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Press tofu to remove excess water. Cut into 1-inch cubes.
  2. Whisk together olive oil, apple cider vinegar, maple syrup, chipotle powder, smoked paprika, salt, and pepper.
  3. Marinate tofu in the mixture for at least 30 minutes.
  4. Thread tofu onto skewers.
  5. Grill or bake skewers until golden brown and slightly crispy.
  6. Combine avocado, mango, red onion, cilantro, and lime juice for the salsa.
  7. Serve tofu skewers with avocado mango salsa.
