Chipotle Agrodolce Tofu Skewers paired with a refreshing Avocado Mango Salsa.
Ingredients

- 1 block extra-firm tofu, pressed
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 tablespoon chipotle powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- Press tofu to remove excess water. Cut into 1-inch cubes.
- Whisk together olive oil, apple cider vinegar, maple syrup, chipotle powder, smoked paprika, salt, and pepper.
- Marinate tofu in the mixture for at least 30 minutes.
- Thread tofu onto skewers.
- Grill or bake skewers until golden brown and slightly crispy.
- Combine avocado, mango, red onion, cilantro, and lime juice for the salsa.
- Serve tofu skewers with avocado mango salsa.

- Adjust chipotle powder to your spice preference.
