Ingredients

- 1 cup whole wheat flour
- 1 scoop vanilla protein powder
- 1/2 cup rolled oats
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
Instructions
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- In a bowl, mix flour, protein powder, oats, baking powder, cinnamon, and brown sugar.
- In another bowl, whisk eggs, applesauce, and almond milk until smooth.
- Combine wet and dry ingredients, folding gently until just mixed.
- Fill muffin cups two-thirds full and bake for 18-20 minutes until golden.
- Cool in tin for 5 minutes, then transfer to a wire rack.
Notes
- You can add a cream cheese frosting for extra sweetness.
- Store leftover muffins in an airtight container.
