Ingredients

- 2 lbs potatoes, peeled and cubed
- 1 large onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup milk
- 4 tbsp butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Optional toppings: shredded cheese, bacon bits, sour cream
Instructions
- Place potatoes and onion in the crockpot.
- Pour chicken broth over potatoes and onion.
- Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
- In a saucepan, melt butter over medium heat.
- Whisk in flour until smooth.
- Gradually whisk in milk and heavy cream until thickened.
- Pour cream mixture into the crockpot.
- Stir well and season with salt and pepper.
- Serve hot with your favorite toppings.
Notes
- For a thicker soup, mash some of the potatoes before adding the cream mixture.
- You can use vegetable broth instead of chicken broth for a vegetarian option.
- Add cooked bacon or ham to the crockpot for extra flavor.
