Description

Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, bacon bits, sour cream

Instructions

  1. Place potatoes and onion in the crockpot.
  2. Pour chicken broth over potatoes and onion.
  3. Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  4. In a saucepan, melt butter over medium heat.
  5. Whisk in flour until smooth.
  6. Gradually whisk in milk and heavy cream until thickened.
  7. Pour cream mixture into the crockpot.
  8. Stir well and season with salt and pepper.
  9. Serve hot with your favorite toppings.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream mixture.
