- 3 cups rolled oats
- 1 cup chopped nuts (pecans, walnuts, or almonds)
- 1/2 cup pumpkin seeds
- 1/4 cup maple syrup
- 1/4 cup pumpkin puree
- 2 tablespoons coconut oil, melted
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup dried cranberries or raisins (optional)
Instructions
- Preheat oven to 300°F (150°C).
- In a large bowl, combine rolled oats, chopped nuts, and pumpkin seeds.
- In a separate bowl, whisk together maple syrup, pumpkin puree, melted coconut oil, pumpkin pie spice, cinnamon, and salt.
- Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
- Spread the granola in a single layer on a baking sheet.
- Bake for 45 minutes, stirring every 15 minutes, until golden brown and crispy.
- Remove from oven and let cool completely.
- Stir in dried cranberries or raisins, if desired.
- Store in an airtight container.
Notes
- Adjust sweetness by adding more or less maple syrup.
- Use any combination of nuts and seeds you like.
- Granola will crisp up as it cools.
