Ingredients

  • 3 cups rolled oats
  • 1 cup chopped nuts (pecans, walnuts, or almonds)
  • 1/2 cup pumpkin seeds
  • 1/4 cup maple syrup
  • 1/4 cup pumpkin puree
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries or raisins (optional)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, combine rolled oats, chopped nuts, and pumpkin seeds.
  3. In a separate bowl, whisk together maple syrup, pumpkin puree, melted coconut oil, pumpkin pie spice, cinnamon, and salt.
  4. Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
  5. Spread the granola in a single layer on a baking sheet.
  6. Bake for 45 minutes, stirring every 15 minutes, until golden brown and crispy.
  7. Remove from oven and let cool completely.
  8. Stir in dried cranberries or raisins, if desired.
  9. Store in an airtight container.

Notes

  • Adjust sweetness by adding more or less maple syrup.
  • Use any combination of nuts and seeds you like.
  • Granola will crisp up as it cools.
