Description

Warm up with this hearty and comforting winter vegetable soup. It’s packed with seasonal vegetables and simple flavors.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 4 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chopped potatoes
  • 1 cup chopped sweet potatoes
  • 1 cup chopped kale
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic, thyme, and rosemary and cook for 1 minute more.
  3. Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add potatoes and sweet potatoes and simmer for 15 minutes, or until tender.
  5. Stir in kale and cook until wilted, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

  • Adjust the amount of vegetables to your preference.
  • Add other vegetables like parsnips, turnips, or butternut squash.
  • For a richer flavor, use chicken broth instead of vegetable broth.
