Description

Enjoy these flavorful cranberry apple twice-baked sweet potatoes. They are a healthy and delicious side dish.


Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 cup chopped apple
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 tablespoons maple syrup
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • Pinch of pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes and pierce several times with a fork.
  3. Bake for 45-60 minutes, or until soft.
  4. Let cool slightly, then cut in half lengthwise.
  5. Scoop out the flesh, leaving a 1/4-inch border.
  6. In a bowl, mash the sweet potato flesh with olive oil, apple, cranberries, pecans, maple syrup, cinnamon, salt, and pepper.
  7. Spoon the mixture back into the sweet potato skins.
  8. Bake for another 15-20 minutes, or until heated through.
  9. Serve warm.

Notes

  • Adjust sweetness to your liking.
  • Add a sprinkle of brown sugar before the second bake for extra caramelization.
  • Use different nuts or dried fruits to customize the flavor.
