Enjoy these flavorful cranberry apple twice-baked sweet potatoes. They are a healthy and delicious side dish.

- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1/2 cup chopped apple
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 2 tablespoons maple syrup
- 1/4 teaspoon cinnamon
- Pinch of salt
- Pinch of pepper
Instructions
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes and pierce several times with a fork.
- Bake for 45-60 minutes, or until soft.
- Let cool slightly, then cut in half lengthwise.
- Scoop out the flesh, leaving a 1/4-inch border.
- In a bowl, mash the sweet potato flesh with olive oil, apple, cranberries, pecans, maple syrup, cinnamon, salt, and pepper.
- Spoon the mixture back into the sweet potato skins.
- Bake for another 15-20 minutes, or until heated through.
- Serve warm.
Notes
- Adjust sweetness to your liking.
- Add a sprinkle of brown sugar before the second bake for extra caramelization.
- Use different nuts or dried fruits to customize the flavor.
