Classic creamed spinach, a rich and comforting side dish.
Ingredients

- 1 tablespoon butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound fresh spinach, washed and chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Melt butter in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Stir in nutmeg, salt, and pepper.
- Add spinach and cook until wilted, about 3-5 minutes.
- Stir in Parmesan cheese until melted and smooth.
- Serve hot.
Notes
- For a richer flavor, use heavy cream instead of milk.
- You can use frozen spinach, but be sure to thaw it completely and squeeze out any excess water before adding it to the skillet.
- Add a pinch of red pepper flakes for a touch of heat.
