Description

Classic creamed spinach, a rich and comforting side dish.


Ingredients

  • 1 tablespoon butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound fresh spinach, washed and chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  5. Stir in nutmeg, salt, and pepper.
  6. Add spinach and cook until wilted, about 3-5 minutes.
  7. Stir in Parmesan cheese until melted and smooth.
  8. Serve hot.

Notes

  • For a richer flavor, use heavy cream instead of milk.
  • You can use frozen spinach, but be sure to thaw it completely and squeeze out any excess water before adding it to the skillet.
  • Add a pinch of red pepper flakes for a touch of heat.
