- 1 onion, chopped
- 2 cloves garlic, minced
- 1 head cauliflower, chopped
- 1 cup broccoli florets
- 1 cup spinach
- 4 cups vegetable broth
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened.
- Add cauliflower, broccoli, spinach, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until vegetables are tender.
- Stir in cream cheese and heavy cream until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot.
