Description

Hearty and comforting creamy beef and potato soup, perfect for a cold day.


Ingredients

  • 1 lb beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 lb potatoes, peeled and cubed
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Brown the beef in olive oil in a large pot or Dutch oven.
  2. Add onion, carrots, and celery and cook until softened.
  3. Pour in beef broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. In a separate bowl, whisk together heavy cream, milk, and flour.
  5. Slowly add the cream mixture to the soup, stirring constantly.
  6. Bring to a simmer and cook until thickened.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

  • For a thicker soup, use more flour.
