Ingredients

- 1 lb beef stew meat, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 lb potatoes, peeled and cubed
- 1 cup heavy cream
- 1/2 cup milk
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Brown the beef in olive oil in a large pot or Dutch oven.
- Add onion, carrots, and celery and cook until softened.
- Pour in beef broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- In a separate bowl, whisk together heavy cream, milk, and flour.
- Slowly add the cream mixture to the soup, stirring constantly.
- Bring to a simmer and cook until thickened.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a thicker soup, use more flour.
- You can substitute milk for half-and-half or more heavy cream for a richer flavor.
- Add other vegetables like corn or peas for extra nutrients.
