Description

Ingredients

  • 1 pound butternut squash, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound gnocchi
  • 1/2 pound Italian sausage, removed from casing
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh sage

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
  2. Cook gnocchi according to package directions. Reserve 1/2 cup pasta water before draining.
  3. While gnocchi cooks, brown sausage in a large skillet over medium heat. Drain any excess grease.
  4. In a blender or food processor, puree roasted butternut squash until smooth.
  5. Add butternut squash puree, heavy cream, Parmesan cheese, and sage to the skillet with the sausage. Heat through.
  6. Add cooked gnocchi to the sauce. Toss to coat. Add reserved pasta water if needed to adjust consistency.
  7. Serve immediately.

Notes

  • Adjust seasoning to your liking.
  • For a spicier dish, use hot Italian sausage.
  • Garnish with extra Parmesan cheese and sage.
