- 1 pound butternut squash, peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound gnocchi
- 1/2 pound Italian sausage, removed from casing
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh sage
Instructions
- Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
- Cook gnocchi according to package directions. Reserve 1/2 cup pasta water before draining.
- While gnocchi cooks, brown sausage in a large skillet over medium heat. Drain any excess grease.
- In a blender or food processor, puree roasted butternut squash until smooth.
- Add butternut squash puree, heavy cream, Parmesan cheese, and sage to the skillet with the sausage. Heat through.
- Add cooked gnocchi to the sauce. Toss to coat. Add reserved pasta water if needed to adjust consistency.
- Serve immediately.
Notes
- Adjust seasoning to your liking.
- For a spicier dish, use hot Italian sausage.
- Garnish with extra Parmesan cheese and sage.
