- 4 large potatoes, peeled and cubed
- 4 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Optional toppings: chives, bacon bits, shredded cheese
Instructions
- Melt butter in a large pot over medium heat. Add onion and garlic, cook until softened.
- Add potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender and blend.
- Stir in heavy cream. Season with salt and pepper. Heat through, but do not boil.
- Serve hot with your favorite toppings.
Notes
- For a thicker soup, blend a portion of the potatoes and leave the rest chunky.
- You can substitute milk for heavy cream for a lighter version.
- Add other vegetables like carrots or celery for extra flavor.
