Description

Ingredients

  • 4 large potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: chives, bacon bits, shredded cheese

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender and blend.
  4. Stir in heavy cream. Season with salt and pepper. Heat through, but do not boil.
  5. Serve hot with your favorite toppings.

Notes

  • For a thicker soup, blend a portion of the potatoes and leave the rest chunky.
  • You can substitute milk for heavy cream for a lighter version.
