- 1 pound gnocchi
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can pumpkin puree
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- Fresh sage leaves for garnish (optional)
Instructions
- Cook gnocchi according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in pumpkin puree, vegetable broth, heavy cream, Parmesan cheese, and nutmeg. Season with salt and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Add cooked gnocchi to the sauce and toss to coat.
- Serve immediately, garnished with fresh sage leaves, if desired.

- For a richer flavor, use brown butter instead of olive oil.
