- 1 pound Italian sausage, removed from casing
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 8 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup acini de pepe pasta
- 1 cup chopped spinach
- 1/2 cup grated Parmesan cheese
Instructions
- Brown the Italian sausage in a skillet over medium heat. Drain off any excess grease.
- Add the sausage, carrots, celery, and onion to a crockpot.
- Pour in the chicken broth and stir in the oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the acini de pepe pasta and spinach during the last 30 minutes of cooking time.
- Serve hot, topped with Parmesan cheese.

- You can use ground turkey or chicken instead of Italian sausage.
