Description

Easy creamy spinach soup is a quick and healthy meal. It is ready in under 30 minutes.


Ingredients

Scale
  • 3 tbsp Unsalted butter
  • 1 medium Yellow onion (finely diced; ~1 cup)
  • 2 cloves Garlic (minced)
  • 1 lb Fresh spinach (or 10 oz frozen spinach)
  • 3 cups Vegetable broth
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 1 cup Heavy cream (or half and half, or full-fat coconut milk for dairy-free and vegan option)
  • Fresh chives (optional, for garnish)

Instructions

  1. In a Dutch oven or large pot over medium heat, melt the butter. Add the onion and saute for 5-6 minutes, until soft and translucent.
  2. Add the garlic and saute for about 1 minute, until fragrant.
  3. Add the spinach, vegetable broth, salt, and pepper. Simmer for about 10 minutes. (The spinach will be fully wilted and tender around 4-5 minutes. Simmer for an additional 5 minutes after this point.)
  4. Remove the spinach soup from heat. Using an immersion blender, blend the mixture until smooth. (Alternatively, you can blend in a regular blender, working in batches if necessary, and then return the soup to the pot.)
  5. Stir in the heavy cream. Adjust salt and pepper to taste if needed.
  6. If you like, garnish with additional heavy cream and fresh chives.

Notes

  • For a vegan option, use full-fat coconut milk instead of heavy cream.
  • Adjust salt and pepper to your preference.
