- 3 cans chickpeas (15 oz / 400 g each), drained and rinsed
- 2 tablespoons extra virgin olive oil
- 1 large onion, chopped
- 2 carrots, cut into discs
- 3 cloves garlic, grated
- ¼ teaspoon red pepper flakes
- 2 tablespoons lemon juice
- 3 tablespoons tahini
- 4 cups vegetable broth
- ½ teaspoon salt
- Black pepper
- 1 small handful fresh dill, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and carrots. Cook for 4 minutes. Stir in garlic and red pepper flakes. Cook for 1 minute.
- Add chickpeas, vegetable broth, salt, and pepper. Simmer for 15 minutes.
- Scoop out 2 cups of soup. Transfer to a blender. Add lemon juice and tahini. Blend until creamy.
- Turn off heat. Stir blended mixture back into the pot. Add lemon zest. Taste and adjust seasoning. Serve with olive oil, pepper, and dill.
