Description

Simple and flavorful Greek chickpea soup. Enjoy this hearty and healthy meal.


Ingredients

Scale
  • 3 cans chickpeas (15 oz / 400 g each), drained and rinsed
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, chopped
  • 2 carrots, cut into discs
  • 3 cloves garlic, grated
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons lemon juice
  • 3 tablespoons tahini
  • 4 cups vegetable broth
  • ½ teaspoon salt
  • Black pepper
  • 1 small handful fresh dill, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and carrots. Cook for 4 minutes. Stir in garlic and red pepper flakes. Cook for 1 minute.
  2. Add chickpeas, vegetable broth, salt, and pepper. Simmer for 15 minutes.
  3. Scoop out 2 cups of soup. Transfer to a blender. Add lemon juice and tahini. Blend until creamy.
  4. Turn off heat. Stir blended mixture back into the pot. Add lemon zest. Taste and adjust seasoning. Serve with olive oil, pepper, and dill.
