Description

Make these easy and healthy apple cinnamon muffins for a quick breakfast or snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup chopped apple

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine applesauce, honey, oil, egg, and vanilla extract.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Fold in chopped apple.
  6. Fill muffin cups 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can use whole wheat flour for a healthier option.
  • Add nuts or raisins for extra flavor.
  • Store muffins in an airtight container at room temperature.
