- 1 box (1 lb 4 oz) brownie mix
- 1/4 cup vegetable oil
- 1/4 cup water
- 2 large eggs
- 1/2 cup lemon curd
- 2 cups powdered sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, combine brownie mix, vegetable oil, water, and eggs. Mix until well combined.
- Pour brownie batter into the prepared pan.
- Drop spoonfuls of lemon curd over the brownie batter. Swirl with a knife.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely in the pan.
- In a medium bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth.
- Pour icing over cooled brownie bars.
- Cut into squares and serve.
Notes
- For a more intense lemon flavor, add more lemon zest to the brownie batter.
- Store in an airtight container at room temperature.
