- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol
- 1/4 cup chocolate flavored protein powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup sugar-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together almond flour, cocoa powder, erythritol, protein powder, baking soda, and salt.
- In a separate bowl, combine melted butter, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Fold in sugar-free chocolate chips.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 8-10 minutes, or until edges are set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store in an airtight container at room temperature.
- You can substitute the erythritol with your preferred keto-friendly sweetener.
- For a softer cookie, slightly underbake them.
