Easy to make keto-friendly double chocolate protein cookies, perfect for a quick and healthy treat.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol
  • 1/4 cup chocolate flavored protein powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together almond flour, cocoa powder, erythritol, protein powder, baking soda, and salt.
  3. In a separate bowl, combine melted butter, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in sugar-free chocolate chips.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes, or until edges are set.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
