Description
Create fun and easy pizza-stuffed pumpkins for a festive Halloween dinner.
Ingredients

- 4 small sugar pumpkins
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound Italian sausage, cooked and crumbled
- 1 red bell pepper, chopped
- 1 onion, chopped
- 1 (15 ounce) can pizza sauce
- 2 cups shredded mozzarella cheese
- Pizza toppings of your choice
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- Cut the tops off the pumpkins and scoop out the seeds and pulp.
- Brush the inside of each pumpkin with olive oil and season with salt and pepper.
- Place the pumpkins on a baking sheet and bake for 30 minutes.
- While the pumpkins are baking, cook the Italian sausage in a skillet over medium heat. Drain off any excess grease.
- Add the red bell pepper and onion to the skillet and cook until softened, about 5 minutes.
- Stir in the pizza sauce and simmer for 10 minutes.
- Remove the pumpkins from the oven and fill each pumpkin with the sausage mixture.
- Top with mozzarella cheese and your favorite pizza toppings.
- Return the pumpkins to the oven and bake for 15 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before serving.

- Use different pizza toppings to customize your pumpkins.
- Prepare the sausage mixture ahead of time.
