Description

Create fun and easy pizza-stuffed pumpkins for a festive Halloween dinner.


Ingredients

Scale
  • 4 small sugar pumpkins
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound Italian sausage, cooked and crumbled
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1 (15 ounce) can pizza sauce
  • 2 cups shredded mozzarella cheese
  • Pizza toppings of your choice

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut the tops off the pumpkins and scoop out the seeds and pulp.
  3. Brush the inside of each pumpkin with olive oil and season with salt and pepper.
  4. Place the pumpkins on a baking sheet and bake for 30 minutes.
  5. While the pumpkins are baking, cook the Italian sausage in a skillet over medium heat. Drain off any excess grease.
  6. Add the red bell pepper and onion to the skillet and cook until softened, about 5 minutes.
  7. Stir in the pizza sauce and simmer for 10 minutes.
  8. Remove the pumpkins from the oven and fill each pumpkin with the sausage mixture.
  9. Top with mozzarella cheese and your favorite pizza toppings.
  10. Return the pumpkins to the oven and bake for 15 minutes, or until the cheese is melted and bubbly.
  11. Let cool slightly before serving.

  • Use different pizza toppings to customize your pumpkins.
  • Prepare the sausage mixture ahead of time.
  • Adjust baking time depending on pumpkin size.
