Description

Quick and simple blueberry muffins packed with protein. A healthy and delicious breakfast or snack option.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup protein powder
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup blueberries
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, whisk together flour, protein powder, sugar, baking powder, and salt.
  4. Gently fold in blueberries.
  5. In a separate bowl, whisk together milk, oil, egg, and vanilla extract.
  6. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  7. Fill muffin liners about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can use fresh or frozen blueberries.
  • Adjust the amount of sugar to your liking.
  • For a gluten-free option, use gluten-free flour.
