Description

A simple and delicious queso chicken chili soup, perfect for a quick and easy meal.


Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, combine the shredded chicken, black beans, corn, diced tomatoes and green chilies, and cream of chicken soup.
  2. Stir in the cream cheese, cheddar cheese, milk, chili powder, and cumin.
  3. Season with salt and pepper to taste.
  4. Heat over medium heat, stirring frequently, until the cheeses are melted and the chili is heated through.
  5. Serve hot.

Notes

  • You can use rotisserie chicken for a quicker preparation.
