Quick and simple veggie burritos perfect for a fast meal.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup cooked rice
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 4 large flour tortillas
- 1 cup shredded cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper and cook until softened, about 5 minutes.
- Stir in black beans, corn, rice, salsa, and cilantro. Cook for 3 minutes.
- Warm tortillas.
- Fill each tortilla with the vegetable mixture and cheese.
- Fold in the sides and roll up tightly.
Notes
- Add your favorite hot sauce for extra spice.
- Use whole wheat tortillas for added fiber.
