Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup cooked rice
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 4 large flour tortillas
  • 1 cup shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper and cook until softened, about 5 minutes.
  3. Stir in black beans, corn, rice, salsa, and cilantro. Cook for 3 minutes.
  4. Warm tortillas.
  5. Fill each tortilla with the vegetable mixture and cheese.
  6. Fold in the sides and roll up tightly.

Notes

  • Add your favorite hot sauce for extra spice.
  • Use whole wheat tortillas for added fiber.
