- 1 packet (2 1/4 teaspoons) active dry yeast

- 2 tablespoons melted butter (dairy or non-dairy)
- 1 large egg
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together gluten-free flour, xanthan gum, salt, and sugar.
- In a separate bowl, dissolve yeast in warm milk. Let stand for 5 minutes until foamy.
- Add melted butter and egg to the yeast mixture.
- Pour wet ingredients into dry ingredients and mix until well combined.
- Spoon batter into greased muffin tin.
- Let rise in a warm place for 30 minutes.
- Bake for 20-25 minutes, or until golden brown.
- Let cool slightly before serving.
