Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with olive oil, salt, and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through.
- Let chicken rest for 5 minutes, then slice.
- In a bowl, combine quinoa, mixed greens, tomatoes, cucumber, and red onion.
- Top with sliced chicken and fresh herbs.
- Drizzle with lemon juice.
