Description

Enjoy a fresh and flavorful Lemon Grilled Chicken BLT Salad. This salad combines grilled chicken, crispy bacon, lettuce, tomatoes, and a zesty lemon dressing.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 6 slices bacon
  • 4 cups mixed greens lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 4 slices bread, toasted

Instructions

  1. Marinate chicken in lemon juice, zest, olive oil, salt, and pepper for 30 minutes.
  2. Cook bacon until crispy. Crumble and set aside.
  3. Grill chicken until cooked through. Let cool and slice.
  4. Whisk together mayonnaise, Dijon mustard, minced garlic, and lemon juice for the dressing.
  5. Toast bread and spread with mayonnaise. Add lettuce, tomato, chicken and bacon
  6. Assemble salad with lettuce, tomatoes, crumbled bacon, and sliced grilled chicken.
  7. Drizzle with lemon dressing.
  8. Serve immediately.

Notes

  • Adjust lemon juice in dressing to your taste.
  • Add avocado for extra creaminess.
  • Use your favorite type of lettuce.
