- 2 boneless, skinless chicken breasts
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- Salt and pepper to taste
- 6 slices bacon
- 4 cups mixed greens lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 4 slices bread, toasted
Instructions
- Marinate chicken in lemon juice, zest, olive oil, salt, and pepper for 30 minutes.
- Cook bacon until crispy. Crumble and set aside.
- Grill chicken until cooked through. Let cool and slice.
- Whisk together mayonnaise, Dijon mustard, minced garlic, and lemon juice for the dressing.
- Toast bread and spread with mayonnaise. Add lettuce, tomato, chicken and bacon
- Assemble salad with lettuce, tomatoes, crumbled bacon, and sliced grilled chicken.
- Drizzle with lemon dressing.
- Serve immediately.
