- 1 1/2 cups gluten-free rolled oats
- 1 cup gluten-free all-purpose flour
- 3/4 cup packed brown sugar
- 1/2 teaspoon baking soda
- 3/4 cup unsalted butter, cold and cubed
- 1 cup fresh blueberries
- 1/4 cup milk
- 1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
- In a large bowl, combine gluten-free oats, gluten-free flour, brown sugar, baking soda, and salt.
- Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a separate small bowl, mash half of the blueberries. Stir in milk and vanilla extract.
- Add the blueberry mixture to the oat mixture and stir until just combined.
- Gently fold in the remaining whole blueberries.
- Press half of the mixture into the prepared baking pan.
- Sprinkle the remaining mixture evenly over the top.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- You can use frozen blueberries if fresh are not available. Do not thaw before using.
- Store bars in an airtight container at room temperature for up to 3 days.
- For a crispier crust, use slightly less butter.
