Description

Enjoy these delicious and healthy gluten-free blueberry oatmeal bars. Perfect for a quick breakfast or snack.


Ingredients

  • 1 1/2 cups gluten-free rolled oats
  • 1 cup gluten-free all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 3/4 cup unsalted butter, cold and cubed
  • 1 cup fresh blueberries
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine gluten-free oats, gluten-free flour, brown sugar, baking soda, and salt.
  3. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate small bowl, mash half of the blueberries. Stir in milk and vanilla extract.
  5. Add the blueberry mixture to the oat mixture and stir until just combined.
  6. Gently fold in the remaining whole blueberries.
  7. Press half of the mixture into the prepared baking pan.
  8. Sprinkle the remaining mixture evenly over the top.
  9. Bake for 20-25 minutes, or until golden brown.
  10. Let cool completely before cutting into bars.

Notes

  • You can use frozen blueberries if fresh are not available. Do not thaw before using.
  • Store bars in an airtight container at room temperature for up to 3 days.
  • For a crispier crust, use slightly less butter.
