Ingredients

  • 1 cup Greek yogurt
  • 1 cup fresh blueberries
  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix Greek yogurt, honey, and eggs until well combined.
  3. Add almond milk and stir until smooth.
  4. In another bowl, combine whole wheat flour, protein powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the fresh blueberries gently.
  7. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
