- 1.5 lbs boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (rosemary, thyme, oregano), chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cooked quinoa or rice
- Assorted fresh vegetables (cucumber, tomatoes, bell peppers)
- Optional: Feta cheese, avocado
Instructions
- Prepare the marinade: Whisk together olive oil, lemon juice, garlic, herbs, salt, and pepper.
- Marinate the chicken: Place chicken in a bag or container and pour marinade over it. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Grill the chicken: Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until cooked through.
- Prepare the bowls: Cook quinoa or rice according to package directions.
- Assemble the bowls: Place quinoa or rice in a bowl. Top with grilled chicken and your choice of fresh vegetables.
- Optional toppings: Add feta cheese or avocado, if desired.
Notes
- For best flavor, marinate the chicken for at least 2 hours.
- You can use any combination of fresh herbs you like.
