Description

Ground turkey stuffed peppers are a healthy and flavorful meal. This recipe uses simple ingredients and is easy to customize.


Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large bell peppers (any color)
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown ground turkey over medium heat. Drain off any excess grease.
  3. Add onion, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in tomato sauce, diced tomatoes, rice, oregano, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Cut the tops off the bell peppers and remove the seeds and membranes.
  6. Stuff each bell pepper with the ground turkey mixture.
  7. Place the stuffed peppers in a baking dish and add 1/2 inch of water to the bottom of the dish.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for another 15 minutes, or until the peppers are tender.
  10. If desired, sprinkle the stuffed peppers with shredded cheese during the last 5 minutes of baking.
  11. Let cool slightly before serving.

Notes

  • You can use any color bell peppers you like.
  • Feel free to add other vegetables to the filling, such as corn, black beans, or zucchini.
  • For a spicier dish, add a pinch of red pepper flakes to the filling.
  • Store leftover stuffed peppers in the refrigerator for up to 3 days.
