Description
Ground turkey stuffed peppers are a healthy and flavorful meal. This recipe uses simple ingredients and is easy to customize.

- 1 pound ground turkey
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 large bell peppers (any color)
- 1 cup shredded cheese (optional)
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown ground turkey over medium heat. Drain off any excess grease.
- Add onion, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in tomato sauce, diced tomatoes, rice, oregano, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff each bell pepper with the ground turkey mixture.
- Place the stuffed peppers in a baking dish and add 1/2 inch of water to the bottom of the dish.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for another 15 minutes, or until the peppers are tender.
- If desired, sprinkle the stuffed peppers with shredded cheese during the last 5 minutes of baking.
- Let cool slightly before serving.
Notes
- You can use any color bell peppers you like.
- Feel free to add other vegetables to the filling, such as corn, black beans, or zucchini.
- For a spicier dish, add a pinch of red pepper flakes to the filling.
- Store leftover stuffed peppers in the refrigerator for up to 3 days.
