Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup peeled and diced apples

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, combine applesauce, oil, granulated sugar, brown sugar, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the diced apples.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute whole wheat flour for all-purpose flour for a healthier option.
  • Add nuts or raisins for extra flavor and texture.
