Description

Enjoy these healthy banana oatmeal muffins for a quick and nutritious breakfast or snack.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup milk
  • 2 ripe bananas, mashed
  • 1/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, combine oats and milk. Let stand for 10 minutes.
  3. Add mashed bananas, maple syrup, egg, and vanilla extract to the oat mixture. Mix well.
  4. In a separate bowl, whisk together baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in chopped walnuts, if desired.
  7. Fill muffin liners about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute almond milk or soy milk for regular milk.
  • Add chocolate chips or blueberries for extra flavor.
  • Store muffins in an airtight container at room temperature for up to 3 days.
