Enjoy these moist and delicious healthy blueberry oat muffins. They are perfect for breakfast or a snack.
Ingredients

- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1 large egg
- 1 cup milk
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, combine oats, flour, baking soda, and salt.
- In a separate bowl, whisk together applesauce, honey, egg, milk, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Gently fold in blueberries.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can use frozen blueberries if fresh are not available. Do not thaw before using.
- For a vegan option, substitute the egg with a flax egg and use plant-based milk.
