Easy to make blueberry oatmeal bars, perfect for a healthy breakfast or snack.
Ingredients

- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 3/4 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
- Stir in melted butter and vanilla extract until well combined.
- Press half of the mixture into the bottom of an ungreased 9×13 inch baking pan.
- Sprinkle blueberries evenly over the crust.
- Crumble the remaining oat mixture over the blueberries.
- Bake for 25-30 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- Use frozen blueberries if fresh are not available. Do not thaw before using.
- Store bars in an airtight container at room temperature.
