Description

Easy to make blueberry oatmeal bars, perfect for a healthy breakfast or snack.


Ingredients

Scale
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
  3. Stir in melted butter and vanilla extract until well combined.
  4. Press half of the mixture into the bottom of an ungreased 9×13 inch baking pan.
  5. Sprinkle blueberries evenly over the crust.
  6. Crumble the remaining oat mixture over the blueberries.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.

Notes

  • Use frozen blueberries if fresh are not available. Do not thaw before using.
  • Store bars in an airtight container at room temperature.
