- 1 cup cooked sweet potato, mashed
- 1/2 cup almond flour
- 1/4 cup oat flour
- 1/4 cup maple syrup
- 2 tablespoons coconut oil, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mash the cooked sweet potato.
- Add almond flour, oat flour, maple syrup, melted coconut oil, cinnamon, baking powder, and salt. Mix well.
- Drop spoonfuls of the mixture onto a baking sheet.
- Bake for 12-15 minutes, or until golden brown.
- Let cool before serving.
Notes
- For a richer flavor, add chopped nuts or chocolate chips.
