- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup brown rice, uncooked
- 2 1/2 cups low-sodium chicken broth
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
- Stir in brown rice, chicken broth, thyme, and cayenne pepper (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until rice is cooked and liquid is absorbed.
- Season with salt and pepper to taste.
- Stir in fresh parsley before serving.
Notes
- For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
- You can substitute ground turkey or chicken for ground beef.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
