A healthier take on classic dirty rice, made with ground beef and wholesome ingredients.
Ingredients

- 1 pound ground beef
- 1 cup brown rice
- 2 cups beef broth
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add ground beef and cook, breaking it apart, until browned. Drain excess grease.
- Add onion, bell pepper, and celery to the pot and cook until softened, about 5 minutes.
- Stir in garlic, Cajun seasoning, black pepper, and cayenne pepper (if using). Cook for 1 minute more.
- Add brown rice and beef broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve.
Notes
- Adjust Cajun seasoning and cayenne pepper to your preferred spice level.
- For a vegetarian version, substitute ground beef with lentils or crumbled tofu.
- You can use white rice instead of brown rice, but cooking time will be shorter (about 15-20 minutes).
