Description

A healthier take on classic dirty rice, made with ground beef and wholesome ingredients.


Ingredients

  • 1 pound ground beef
  • 1 cup brown rice
  • 2 cups beef broth
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground beef and cook, breaking it apart, until browned. Drain excess grease.
  3. Add onion, bell pepper, and celery to the pot and cook until softened, about 5 minutes.
  4. Stir in garlic, Cajun seasoning, black pepper, and cayenne pepper (if using). Cook for 1 minute more.
  5. Add brown rice and beef broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until rice is cooked and liquid is absorbed.
  6. Fluff with a fork and serve.

Notes

  • Adjust Cajun seasoning and cayenne pepper to your preferred spice level.
  • For a vegetarian version, substitute ground beef with lentils or crumbled tofu.
  • You can use white rice instead of brown rice, but cooking time will be shorter (about 15-20 minutes).
