Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup tzatziki sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  4. Let chicken rest for 5 minutes, then dice or slice.
  5. Divide quinoa among bowls.
  6. Top with cucumber, tomatoes, olives, feta, and red onion.
  7. Add chicken and drizzle with tzatziki sauce.
