- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/2 cup tzatziki sauce
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
- Place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
- Let chicken rest for 5 minutes, then dice or slice.
- Divide quinoa among bowls.
- Top with cucumber, tomatoes, olives, feta, and red onion.
- Add chicken and drizzle with tzatziki sauce.
- Serve immediately.
